Ingredients
Scale
Dough and Base
- 1 tube crescent dough (or 2 sheets of puff pastry, semi-thawed)
- 1 spray cooking oil spray (for pan)
- 1 pinch all purpose flour (for work surface)
- 1 wheel brie (8oz / 250g full wheel)
- 8 teaspoons butter (melted)
- 1 clove garlic (crushed or minced)
- 1 spring rosemary (leaves torn off stem)
- 1 pinch salt (to taste)
- 1 pinch cracked pepper (to season)
Toppings
- 6 teaspoons whole berry cranberry sauce (or cranberry jelly/jam)
- 6 teaspoons diced bacon (cooked, or bacon bits)
- 6 pecans (halved lengthways)
- 1–2 tablespoons maple syrup
- 6 teaspoons apricot preserves (or jam)
- 6 teaspoons walnuts (crushed)
Instructions
- Preheat Oven and Prepare Tin: Preheat your oven to 375°F (180°C). Lightly grease a mini muffin tin with cooking spray to prevent sticking.
- Prepare Dough: If using crescent dough, unroll it onto a lightly floured surface and pinch the seams together to seal. If using puff pastry, unroll it on the parchment paper to avoid sticking. Cut the dough into 24 equal squares, then gently press each square into the holes of the mini muffin tin forming little cups.
- Cut and Add Brie: Cut the brie wheel into 24 small pieces, roughly the size to fit in each dough cup, and place one piece inside each dough cup.
- Add Cranberry Topping: Place a spoonful of whole berry cranberry sauce into 6 of the dough cups containing brie. Lightly season with salt and cracked pepper to taste.
- Add Maple Bacon Topping: For another 6 cups, add a spoonful of cooked diced bacon, two pecan halves, and drizzle with maple syrup. Season with cracked pepper.
- Add Apricot Walnut Topping: Spoon apricot preserves along with crushed walnuts into 6 cups. Finish with a pinch of salt for balanced flavor.
- Add Garlic Butter Herb Topping: Mix melted butter with crushed garlic. Spoon just over 1 teaspoon of this garlic butter mixture over the remaining 6 brie cups and top with 2-3 rosemary leaves. Season with salt and pepper to taste.
- Bake: Place the muffin tin in the preheated oven and bake the bites for about 10-15 minutes, or until the crescent dough is golden and puffed. The brie will be melted and toppings simmering to perfection.
Notes
- For best results, use chilled dough as it handles easier when forming the cups.
- Adjust seasoning on toppings according to your preference.
- You can prepare toppings ahead of time and assemble just before baking.
- Serve warm for a gooey and flavorful bite.
- Variations include adding herbs like thyme or substituting nuts based on availability.
