Ingredients

Scale

Ground Beef Mixture

  • 1 lb ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil

Toppings

  • 5.5 oz tortilla chips
  • 1 cup cherry tomatoes, sliced in half
  • ¼ yellow onion, chopped
  • ½ cup frozen corn
  • ½ cup canned black beans, drained and rinsed
  • ½ cup canned pinto beans, drained and rinsed
  • ½ cup sliced black olives
  • 4 chopped scallions (about ¾ cup)
  • 2 ½ cups shredded mozzarella cheese (or any cheese you prefer)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper and set it aside for assembling the nachos.
  2. Cook Ground Beef: Heat 1 tablespoon of cooking oil in a frying pan over medium-high heat. Add 1 lb of ground beef and stir in the garlic powder, onion powder, paprika, cumin, salt, and black pepper. Mix well to evenly distribute the spices.
  3. Sauté Beef: Cook the ground beef until it is no longer pink, about 5-10 minutes, stirring occasionally. Once cooked through, drain any excess grease from the pan for a less oily dish.
  4. Arrange Chips: Spread a layer of tortilla chips evenly across the prepared baking sheet to form the base of your nachos.
  5. Add Toppings: Evenly distribute the cooked ground beef over the chips. Sprinkle on the chopped scallions, halved cherry tomatoes, chopped yellow onion, corn, black beans, pinto beans, and sliced black olives for a colorful and flavorful combination.
  6. Add Cheese and Bake: Generously sprinkle 2 ½ cups of shredded mozzarella cheese over the entire sheet. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is fully melted and bubbly.
  7. Serve: Carefully remove the nachos from the oven, let them cool for about 5 minutes to set, then serve immediately for the best flavor and texture.

Notes

  • You can substitute mozzarella with cheddar, Monterey Jack, or a Mexican blend for different flavors.
  • For added heat, consider sprinkling some jalapeño slices before baking.
  • Drain the beans thoroughly to avoid soggy nachos.
  • Feel free to add sour cream, guacamole, or salsa on the side for serving.
  • Leftovers can be refrigerated and reheated in the oven to retain crispiness.
