Ingredients
Scale
Salmon
- 4 skinless salmon filets (about 6 ounces each), patted dry
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup (59 g) Caesar salad dressing
- 1 cup (113 g) mozzarella cheese, shredded
- ¼ cup (25 g) Parmesan cheese, freshly grated
- Lemon wedges, for serving
- Extra Parmesan cheese, for serving
Broccoli
- 5 to 6 cups fresh broccoli florets, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
- Preheat oven and prepare baking sheet. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
- Season and spread broccoli. Place the broccoli florets on the baking sheet. Drizzle with 2 tablespoons olive oil, then season with 1 teaspoon kosher salt and ½ teaspoon black pepper. Toss to coat evenly and spread the broccoli into a single, even layer.
- Optional: Roast broccoli for extra crispiness. For a crispier texture, roast the broccoli alone for 5 minutes before adding the salmon to the pan.
- Season salmon filets. Meanwhile, season the salmon filets with the remaining ½ teaspoon kosher salt and ½ teaspoon black pepper on both sides.
- Add salmon to the baking sheet. Nestle the seasoned salmon filets gently among the broccoli florets on the sheet pan.
- Brush Caesar dressing and add cheese. Spoon or brush 1 to 2 tablespoons of Caesar salad dressing over each salmon filet. Then sprinkle shredded mozzarella and freshly grated Parmesan cheese evenly over both the salmon and broccoli.
- Bake until cooked through and golden. Place the pan in the oven and bake for 18 to 22 minutes, until the salmon reaches an internal temperature of 145°F (63°C), the cheese is melted, bubbly and golden, and the broccoli is tender with crispy edges.
- Rest the salmon. Remove the baking sheet from the oven and allow the salmon to rest for 2 to 3 minutes to let the juices redistribute.
- Serve. Serve immediately with lemon wedges to squeeze over the top and extra Parmesan cheese for garnish if desired.
Notes
- The broccoli can be roasted a few minutes alone before adding salmon for extra crispiness.
- Make sure salmon filets are patted dry to help the Caesar dressing stick better.
- Use fresh Parmesan for the best flavor and melting quality.
- This recipe can be doubled or halved easily on a larger or smaller baking sheet.
- Internal cooking temperature is key to avoiding overcooked salmon—use a meat thermometer.
