Ingredients
Scale
Skewers and Chicken
- 15 wooden skewers, soaked in water for 30 minutes
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- 2 tablespoons extra virgin olive oil
Fruit and Vegetables
- 4 yellow peaches, quartered, then halved (32 pieces)
- 3 medium jalapeno peppers, halved, seeded, cut into chunks
Peach Glaze
- ½ cup (160 g) peach preserves
- 1 tablespoon extra virgin olive oil
- 1 teaspoon soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic, minced
- ½ teaspoon kosher salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon red pepper flakes
Instructions
- Season Chicken: In a large bowl, combine the chicken cubes with kosher salt, black pepper, chili powder, and 2 tablespoons of extra virgin olive oil. Toss thoroughly to ensure the chicken is evenly coated with the seasoning.
- Thread Skewers: Take the soaked wooden skewers and thread the ingredients in this order: peach piece, chicken piece, jalapeno chunk, chicken piece, jalapeno chunk, chicken piece, and finish with a peach piece. You can adjust the sequence if desired, but this assembly balances the flavors well.
- Preheat Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat while preparing the skewers. This ensures even cooking from the start.
- Prepare Skewers for Cooking: Lightly brush each assembled skewer with extra virgin olive oil to prevent sticking in the air fryer basket. Arrange the skewers in a single layer; you may need to cook in batches depending on your air fryer size.
- Air Fry the Skewers: Cook the skewers at 375°F for 11 to 12 minutes. Turn halfway through if your air fryer requires it for even browning. Check that the chicken reaches an internal temperature of 165°F for safe consumption.
- Make Peach Glaze: While the skewers cook, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes in a medium saucepan. Stir to blend and warm the glaze over medium heat until it’s heated through and slightly thickened.
- Glaze and Serve: After removing the skewers from the air fryer, brush them generously with the warm peach glaze. Serve the skewers warm, allowing the glaze to enhance the sweet and spicy profile.
Notes
- Soaking wooden skewers prevents them from burning during cooking.
- Adjust the number of jalapenos if you prefer less or more heat.
- This recipe works well with a grill if you prefer traditional cooking methods.
- Leftover glaze can be refrigerated for up to 3 days and used as a sauce or dip.
- Check your air fryer’s capacity—cook in batches if necessary to avoid overcrowding.
