Description

Greek Chicken Skewers marinated in a flavorful blend of Greek yogurt, spices, and herbs, then roasted to perfection and served with a refreshing dill yogurt sauce. This dish brings together tender, juicy chicken with Mediterranean flavors for an easy yet impressive meal.

Ingredients

Scale

Chicken Marinade

  • 2 ½ pounds chicken breasts, cut into bite-sized pieces
  • ½ cup Greek yogurt
  • 2 tbsp olive oil
  • 2 tsp sweet paprika
  • 2 tsp salt
  • 2 tsp dried oregano
  • ½ tsp ground cumin
  • 1 tsp chili flakes
  • 1 tsp coarsely ground black pepper
  • 2 tsp lemon juice
  • 5 garlic cloves, pressed

Dill Yogurt Sauce

  • 3 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • ¼ tsp salt
  • ¼ tsp coarsely ground black pepper
  • 2 tbsp fresh dill, chopped

Instructions

  1. Marinating: Cut the chicken breasts into bite-sized pieces and place them in a large bowl. Add ½ cup Greek yogurt, 2 tsp salt, 1 tsp black pepper, 2 tsp sweet paprika, 2 tsp dried oregano, ½ tsp ground cumin, 1 tsp chili flakes, 2 tbsp olive oil, 5 pressed garlic cloves, and 2 tsp lemon juice. Toss thoroughly to ensure all pieces are well coated. Cover the bowl and refrigerate for 4 to 12 hours to allow the flavors to deeply infuse into the chicken.
  2. Preheating: Remove the marinated chicken from the fridge about 15 minutes before cooking. Preheat your oven to 400°F (200°C) to get ready for roasting the skewers.
  3. Threading: Thread the marinated chicken pieces onto 8 skewers evenly. Place the prepared skewers on a baking sheet lined with parchment paper to prevent sticking and make cleanup easier.
  4. Roasting: Roast the skewers in the preheated oven for 15 minutes. Check to see that the chicken is nicely browned and begins to char around the edges. For extra color and a slight char, switch the oven to broil and cook the skewers for an additional 4 minutes, watching carefully to avoid burning.
  5. Whisking the Sauce: While the chicken is roasting, prepare the dill yogurt sauce by combining 3 tbsp Greek yogurt, 1 tbsp mayonnaise, ¼ tsp salt, ¼ tsp coarsely ground black pepper, and 2 tbsp finely chopped fresh dill in a small bowl. Whisk until the sauce is smooth and well blended.
  6. Serving: Once the chicken skewers are out of the oven, let them rest briefly before serving. Pair with the dill yogurt sauce and your choice of sides such as a fresh salad, pita bread, or grilled vegetables to complete this delicious Mediterranean meal.

Notes

  • Marinate the chicken for at least 4 hours; overnight marination will yield the best flavor and tenderness.
  • If using wooden skewers, soak them in water for 30 minutes before threading to prevent burning in the oven.
  • Adjust chili flakes based on your spice preference.
  • The broiling step is optional but recommended for added char and flavor.
  • This recipe pairs well with tzatziki or a fresh cucumber salad for an authentic Greek meal.
  • Ensure the chicken is cooked through to an internal temperature of 165°F (74°C) for food safety.
  • Prep Time: 15 minutes plus 4-12 hours marinating
  • Cook Time: 19 minutes (15 minutes roasting + 4 minutes broiling)
