  • 1 lb. green cabbage, cored and chopped into 1 inch pieces (~6 heaping cups)

Instructions

  1. Prepare Glaze: In a small bowl, combine apple cider vinegar, whole-grain mustard, minced garlic, and maple syrup, mixing well until fully incorporated. Set aside to let the flavors meld.
  2. Sauté Chicken Sausage: Heat 1 tablespoon of olive oil in a large skillet or sauté pan with a fitted lid over medium heat. Arrange the thinly sliced chicken sausage in a single layer and cook undisturbed for 3 minutes. Flip and cook the other side for an additional 3 minutes until golden brown. Transfer the sausage to a plate and set aside.
  3. Sauté Fennel: Add another tablespoon of olive oil to the same pan along with the thinly sliced fennel. Cook for about 6 minutes, stirring occasionally, until the fennel softens and begins to caramelize.
  4. Cook Cabbage: Add the chopped green cabbage to the pan with the fennel and pour in the remaining tablespoon of olive oil. Cover the pan and cook for 6 minutes, lifting the lid to stir every 2 minutes to ensure even cooking. The cabbage should soften and start to develop some color.
  5. Add Glaze: Remove the lid and pour in the prepared apple cider vinegar glaze.
