Baked Potato Slices with Cheddar, Bacon, and Green Onions Recipe

  • Author: Lila
  • Total Time: 50 minutes
  • Yield: 5 servings 1x

Description

This recipe for baked potato slices combines crispy, seasoned potato rounds with melted cheddar cheese, savory bacon, and fresh green onions. Perfect as a comforting side dish or appetizer, these cheesy bacon-topped potato slices are baked to golden perfection and finished with a sprinkle of Italian seasoning and a dollop of sour cream for extra flavor.

Ingredients

Scale

Potatoes

  • 3 russet potatoes (scrubbed clean)
  • 1 tablespoon vegetable oil (canola or olive oil work as well)
  • Salt and pepper to taste

Toppings

  • 2.5 cups cheddar cheese, shredded
  • 6 slices uncooked bacon
  • 1 tablespoon Italian seasoning
  • 2 green onions, diced
  • Sour cream, for serving

Instructions

  1. Preheat and prep bacon: Preheat your oven to 375°F (190°C). Take the bacon out of the refrigerator and let it sit at room temperature for about 5 minutes; this helps it crisp up when cooked.
  2. Slice and oil potatoes: Cut the russet potatoes into roughly 1/2-inch thick slices. Use a pastry brush to lightly oil the tops of the slices, then flip them and oil the other side. Season both sides with salt and pepper to taste.
  3. Initial baking: Arrange the potato slices on a baking sheet in a single layer and bake them in the preheated oven for 25 minutes to start cooking through and getting tender.
  4. Cook bacon: While the potatoes bake, cook the bacon on the stovetop over low heat. Flip the slices occasionally using kitchen tongs to ensure even cooking. Once crispy, remove the bacon and reserve the bacon drippings in the pan.
  5. Baste and continue baking: Remove the potato slices from the oven and lightly brush both sides with the reserved bacon drippings. Flip them to coat evenly, then return the potatoes to bake for another 10 minutes to absorb flavors and become crispier.
  6. Add cheese and bacon, melt: Lower the oven temperature to 350°F (175°C). Top each potato slice with shredded cheddar cheese and crumbled bacon. Place the baking sheet back in the oven and bake for about 5 minutes, or until the cheese is fully melted.
  7. Final seasoning and serving: Remove the cheesy bacon-topped potato slices from the oven, sprinkle with Italian seasoning, and garnish with diced green onions. Serve warm with sour cream on the side for dipping. Enjoy!

Notes

  • For extra crispiness, you can broil the potato slices for 1-2 minutes at the end but watch carefully to prevent burning.
  • Substitute bacon with turkey bacon or omit for a vegetarian version, adjusting toppings accordingly.
  • Use sharp cheddar for a more intense cheese flavor or mild cheddar for a creamier taste.
  • Leftovers can be refrigerated and reheated in the oven or air fryer to regain crispiness.
