For the Meatballs

- 1 medium zucchini, grated
- ½ teaspoon salt
- 1 cup Italian-style breadcrumbs
- 1 large egg
- ½ cup grated Parmesan cheese

- 2 tablespoons chopped fresh parsley
- 1 teaspoon Italian seasoning
- ½ teaspoon onion powder
- ½ teaspoon black pepper

- 3 cups marinara sauce
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon crushed red pepper flakes (optional)
For the Subs
- 6 sub rolls
- 2 cups shredded mozzarella cheese
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
Instructions
- Prepare the Zucchini: Wash and grate the zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and gently squeeze out as much moisture as possible to help the meatballs hold their shape.
- Make the Meatball Mixture: In a large mixing bowl, combine the ground beef or chicken, grated zucchini, breadcrumbs, egg, Parmesan cheese, minced garlic, chopped fresh parsley, Italian seasoning, onion powder, salt, and black pepper. Mix gently with your hands or a spoon until just combined, avoiding overmixing to keep the meatballs tender.
- Shape the Meatballs: Roll the mixture into approximately 18 evenly sized meatballs, about 1½ inches in diameter. Place them on a plate or baking sheet as you work.
- Brown the Meatballs: Heat the olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning occasionally, until browned on all sides, about 6–8 minutes. They do not need to be fully cooked at this stage. Transfer the browned meatballs to a plate.
- Simmer in the Sauce: Pour the marinara sauce into the same skillet. Stir in the Italian seasoning, garlic powder, and crushed red pepper flakes if using. Return the meatballs to the skillet, spoon sauce over them, cover, and simmer for 15–20 minutes until the meatballs are cooked through and reach an internal temperature of 165°F (74°C) for chicken or 160°F (71°C) for beef.
- Prepare the Rolls: Preheat the oven to 375°F (190°C). Slice the sub rolls lengthwise without cutting all the way through. Mix the melted butter with garlic powder and dried parsley, then brush the mixture over the cut sides of the rolls. Toast the rolls in the oven for 5–7 minutes until lightly crisp.
- Assemble the Subs: Place three meatballs inside each toasted roll. Spoon extra marinara sauce over the meatballs and top generously with shredded mozzarella cheese.
- Melt the Cheese: Return the assembled subs to the oven for 3–5 minutes, or until the cheese is melted and bubbly. For extra browning, broil for 1–2 minutes while watching carefully to avoid burning.
- Garnish and Serve: Optionally sprinkle with chopped parsley and extra grated Parmesan cheese. Serve immediately while hot with melted cheese.
