Instructions

  1. Prepare the oven and dry ingredients: Preheat your oven to the specified temperature for sponge cakes, usually 350°F (175°C). Line a baking sheet with parchment paper for easy removal. Sift together flour, cocoa powder, baking powder, and salt into a bowl to ensure a light and even mixture.
  2. Make the sponge batter: In a separate large bowl, beat the eggs and granulated sugar with a mixer until the mixture becomes fluffy and light, which will help give the sponge its airy texture. Carefully fold the sifted dry ingredients into the egg mixture to retain as much air as possible.
