  • Author: Lila
  • Total Time: 1 hour
  • Yield: 8 servings 1x

Description

This Warm Chicken Lentil Stew is a hearty and nutritious one-pot meal featuring tender chicken thighs, lentils, and a medley of vegetables simmered together to create a comforting, flavorful dish perfect for any season.

Ingredients

Scale

Vegetables

  • 1 medium onion, chopped
  • 3 cloves garlic, minced (or 3 teaspoons minced garlic)
  • 1/2 large red capsicum/bell pepper, seeded and chopped
  • 1 large carrot, peeled and chopped
  • 2 large ripe tomatoes, diced
  • 2 medium white potatoes, chopped
  • 2 cups chopped pumpkin
  • 2 cups baby spinach leaves, washed
  • 1 handful chopped parsley

Protein & Legumes

  • 6 chicken thigh fillets, cubed
  • 1 cup lentils, pre-soaked overnight (or 1 can of lentils)

Liquids & Seasoning

  • 2 cups water
  • 2 pinches salt and pepper, to taste

Instructions

  1. Sauté the aromatics and vegetables: In a large saucepan or pot, fry the chopped onion, minced garlic, chopped red capsicum/bell pepper, and chopped carrot over medium heat until the onion becomes transparent and fragrant.
  2. Brown the chicken: Add the cubed chicken thigh fillets to the pot and fry until they are nicely browned on all sides, sealing in the flavors.
  3. Cook the tomatoes: Incorporate the diced ripe tomatoes and cook until they soften, releasing their juices to develop the stew’s base.
  4. Simmer initially: Reduce the heat to low, cover the pot with a lid, and let the mixture simmer gently for about ten minutes to meld flavors.
  5. Add lentils and water: Pour in 2 cups of water and the pre-soaked lentils (or canned lentils if using), cover again with a lid, and continue simmering for approximately 30 minutes until the lentils are tender.
  6. Add root vegetables and pumpkin: Stir in the chopped potatoes and pumpkin, cooking the stew until these vegetables are soft, approximately 10-15 minutes more.
  7. Finish with greens and seasoning: Remove the pot from heat and fold in the washed baby spinach leaves, stirring until just wilted. Season with salt, pepper, and sprinkle with chopped parsley to taste before serving.

Notes

  • Pre-soaking lentils overnight reduces cooking time and improves digestibility.
  • Canned lentils can be used as a convenient alternative; adjust cooking time accordingly.
  • For extra depth of flavor, consider adding a bay leaf or smoked paprika during the simmering stages.
  • This stew can be stored refrigerated for up to 3 days and reheated gently.
  • Feel free to substitute chicken thigh fillets with breast fillets, though thighs remain juicier.
