- 300 g all-purpose flour
- 3 teaspoons pumpkin spice mix (see note 2)
- 2 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
Wet Ingredients for Cake Batter
- 300 g canned pumpkin puree (not pumpkin pie filling)
- 100 g granulated sugar
- 75 g light brown sugar
- 120 ml olive oil (see note 3)
- Half batch vegan buttermilk (soy milk + vinegar)
- 80 g vegan Greek-style yogurt (see note 4)
- 1 tablespoon vanilla extract
Assembly and Glaze
- 1 tablespoon vegan pumpkin butter (reserved for icing)
- 90 g powdered sugar
- 2 teaspoons vegan Greek-style yogurt
Instructions
- Preparation: Make the pumpkin butter at least 2 hours ahead or up to 2 days before baking. Line the base and sides of a 7.5 or 8-inch springform pan with parchment paper. Preheat the oven to 160°C (320°F) fan-forced or 180°C (356°F) conventional.
- Make Crumb Topping: Combine crumb topping ingredients in a bowl. Use your fingertips to rub the mixture until it forms a sandy, crumbly texture. Set aside.
- Mix Dry Ingredients: Sift together flour, pumpkin spice mix, baking powder, baking soda, and sea salt in a bowl. Stir to combine and set aside.
