Ingredients

Scale

Main Ingredients

  • 4 Gardein Chick’n Scallopini pieces
  • 4 slices vegan ham (such as Tofurky)
  • 2 slices vegan Swiss cheese (Daiya, cut in half)

Coating and Sauce

  • 3 tablespoons vegan mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 cup Just Egg (vegan egg substitute)
  • ½ cup Panko breadcrumbs
  • Oil spray (for baking)
  • Additional vegan mayonnaise (for serving)
  • Additional Dijon mustard (for serving)

Instructions

  1. Thaw Chick’n: Thaw the Gardein Chick’n Scallopini in the refrigerator overnight to ensure it is fully defrosted before cooking.
  2. Preheat Oven: Preheat your oven to 370°F (188°C) to prepare for baking the cordon bleu.
  3. Assemble Sandwich: On one piece of thawed chick’n, layer a slice of vegan ham and two halves of vegan Swiss cheese. Top with another chick’n piece to create a sandwich.
  4. Prepare Sauce Mixture: In a small bowl, combine the vegan mayonnaise and Dijon mustard, mixing well to create a flavorful coating sauce.
  5. Brush Sauce: Generously brush the mayo-mustard mixture onto both sides of each assembled chick’n sandwich to enhance flavor and help the coating stick.
  6. Dip in Just Egg: Dip each side of the sandwiches into the Just Egg, ensuring they are fully coated to help the breadcrumbs adhere.
  7. Coat with Breadcrumbs: Roll each coated chick’n sandwich in Panko breadcrumbs, covering all surfaces evenly for a crispy crust.
  8. Prepare for Baking: Place the breaded sandwiches on a baking sheet lined with parchment paper or lightly greased. Use toothpicks to secure the sandwiches if needed, and lightly spray the tops with cooking oil for extra crispiness.
  9. Bake: Bake in the preheated oven for 20 minutes. Carefully flip each sandwich and bake for an additional 15 minutes until the outside is golden brown and crispy.
  10. Serve: Remove toothpicks, serve the vegan cordon bleu hot with extra vegan mayo and Dijon mustard on the side for dipping.

Notes

  • Ensure the chick’n is fully thawed before assembling to avoid uneven cooking.
  • If you prefer a crispier crust, you can broil the sandwiches for 1-2 minutes at the end of baking, watching closely to prevent burning.
  • Use toothpicks to secure the sandwiches to prevent filling from leaking during baking.
  • Leftovers can be refrigerated for up to 2 days and reheated in the oven for best results.
  • Customize the filling with vegan ham varieties or add vegan garlic butter for extra flavor.
