Ingredients

Scale

Aioli

  • 3 large cloves garlic, grated
  • 2 tsp lemon juice
  • Pinch of salt
  • 1/2 cup light mayo
  • 1/2 tbsp hot honey

Coleslaw

  • 1 cup green cabbage, shredded
  • 1 cup carrot, shredded
  • 1 cup red cabbage, shredded
  • 1 tbsp lemon juice
  • 1 tbsp low-fat Greek yogurt
  • 1 tbsp fresh chopped parsley
  • 1/4 tsp salt
  • 1/8 tsp pepper

Turkey Patties

  • 1.4 lbs ground turkey (8 x 80g patties)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp mustard powder
  • 3/4 tsp salt
  • 1/4 tsp pepper

Burger Assembly

  • 8 leaves baby cos lettuce
  • 12 slices sliced dill pickles
  • 8 slices good quality cheddar cheese
  • 4 brioche burger buns

Instructions

  1. Prepare the Aioli: Combine grated garlic and lemon juice with a pinch of salt. Let it rest for 5 minutes to allow flavors to blend. Strain the mixture pressing the garlic to extract all the juice and discard the solids. Stir in the light mayo and hot honey until smooth.
  2. Make the Coleslaw: In a large bowl, mix shredded green cabbage, carrot, and red cabbage with Greek yogurt, lemon juice, chopped parsley, salt, and pepper. Toss well to combine and set aside.
  3. Season Turkey Patty Mix: Combine ground turkey with onion powder, garlic powder, smoked paprika, mustard powder, salt, and pepper. Mix thoroughly until all spices are evenly distributed.
  4. Form Patties: Portion the meat mixture into 8 balls, each about 80 grams, and prepare them for cooking.
  5. Toast Buns: Halve the brioche buns and toast the cut sides on a hot pan or plancha until they are crispy and golden brown. Spread aioli generously on both sides of each bun.
  6. Cook Patties: Spray a high-heat pan with oil. Place the turkey meatballs in the pan and press each firmly with a burger weight to smash them flat. Cook for 3 minutes without moving until they are well browned.
  7. Add Cheese and Flip: Flip the patties, add a slice of cheddar to each, and allow the cheese to melt while the patties finish cooking. Once cooked, stack two patties together per burger.
  8. Assemble the Burger: On the bottom half of the bun, layer 2 baby cos lettuce leaves and 3 pickle slices. Place the double turkey patty on top, add a generous portion of coleslaw, then close with the top bun.
  9. Serve and Enjoy: Serve the assembled burgers immediately for best flavor and texture.

Notes

  • Pressing the patties thin ensures a crispy crust and quick cooking.
  • Letting the garlic and lemon juice rest before straining mellows the garlic’s sharpness.
  • Double patties create a more substantial burger without being dry thanks to ground turkey’s leanness paired with flavorful aioli and coleslaw.
  • To add moisture, you can brush the patties with a little oil before cooking if desired.
  • Use fresh, high-quality cheddar for best melting and flavor.
  • Toast buns thoroughly to prevent sogginess from the aioli and coleslaw.
