Mousse

  • 9 ounces semisweet chocolate

Instructions

  1. Prepare the Cake Base: Preheat your oven to 350°F (175°C). Using a double boiler, melt the unsweetened chocolate and butter together until smooth. Allow the mixture to cool to avoid cooking the eggs in the next step.
  2. Mix Wet Ingredients: In a large bowl, beat the granulated sugar and eggs until the mixture becomes thick and creamy. Stir in the vanilla extract followed by the cooled melted chocolate and butter blend until fully incorporated.
  3. Combine Dry Ingredients and Bake: Sift together the all-purpose flour and cocoa powder. Gently fold these dry ingredients into the wet chocolate mixture until just combined, ensuring not to overmix. Pour the batter into a greased springform pan and bake for 35 minutes until set. Allow the cake to cool completely before proceeding.
  4. Prepare the Mousse: Bloom the gelatin powder in a small amount of water as per package instructions. Melt the 6 ounces of semisweet chocolate separately. Whip the 1 ½ cups of cold heavy cream with 2 tablespoons of granulated sugar until soft peaks form. Gently fold the whipped cream and melted chocolate together, then incorporate the bloomed gelatin until fully combined to create the mousse.
  5. Assemble the Mousse Layers: Spread half of the prepared mousse evenly over the cooled cake layer. Chill the cake with mousse in the refrigerator for 30 minutes to set. Then, add the remaining mousse on top and chill for at least two hours, or until fully firm.
  6. Make and Add the Ganache: Heat ¾ cups heavy cream and 1 tablespoon unsalted butter together until hot but not boiling. Pour this mixture over the 9 ounces chopped semisweet chocolate and stir gently until the chocolate is completely melted and the ganache is smooth. Pour the ganache evenly over the set mousse layer before serving.
