Instructions
- Marinate the chicken: Place the chicken pieces in a large bowl and pour in the buttermilk. Season with salt, black pepper, and paprika. Cover and refrigerate for at least 1 hour, preferably overnight, to tenderize the meat and infuse flavor.
- Prepare the coating: In a shallow dish, whisk together all-purpose flour, seasoned salt, garlic powder, onion powder, paprika, cayenne pepper (if using), and black pepper. This seasoned flour will create the crispy, flavorful crust.
- Coat the chicken: Remove the chicken pieces from the buttermilk, allowing excess marinade to drip off. Thoroughly dredge each piece in the seasoned flour, pressing lightly to ensure an even, thick coating.
- Heat the oil: Heat vegetable or peanut oil in a deep skillet or Dutch oven to 350°F (175°C). The oil should be deep enough to submerge halfway up the chicken pieces to ensure even frying.
