Instructions

  1. Add Chicken and Veggies to Slow Cooker: Place the boneless skinless chicken breasts, sliced carrots, sliced celery, diced onion, and minced garlic cloves into a 6–8 qt black oval slow cooker.
  2. Add Broth and Seasonings: Pour in the low-sodium chicken broth. Add dried thyme, dried parsley, bay leaf, salt, and black pepper to the slow cooker with the ingredients.
  3. Slow Cook: Cover the slow cooker and cook on low for 6–8 hours or on high for 4 hours until the chicken is fully cooked and vegetables are soft and tender.
  4. Shred Chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back into the slow cooker, mixing it into the soup.
  5. Add Noodles: Stir in the uncooked egg noodles, cover, and cook on high for 10–15 minutes until the noodles are cooked through and tender.
