Instructions

  1. Cook Pasta: Cook the fettuccine pasta according to the package directions. Be sure to reserve about 1/2 cup of the pasta cooking water before draining the pasta; this starchy water can be used to adjust the sauce consistency later.
  2. Sauté Aromatics: While the pasta cooks, heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 3 to 5 minutes.
  3. Add Garlic and Seasoning: Stir in the minced garlic and Italian seasoning. Cook for one more minute until the garlic is fragrant, being careful not to burn it.
  4. Cook Zucchini: Add the diced zucchini to the skillet and cook, stirring occasionally, until the zucchini becomes tender, approximately 5 to 7 minutes.
  5. Simmer Sauce: Pour in the chicken or vegetable broth and the lemon juice. Bring the mixture to a simmer and cook for 2 to 3 minutes to enhance flavors and reduce slightly.
  6. Add Butter and Cheese: Stir in the remaining 1 tablespoon of butter and the freshly grated Parmesan cheese. Continue stirring until the cheese melts into the sauce and it becomes creamy. Season with salt and pepper to taste.
