Custard Base

Instructions
- Bloom the Gelatin: Sprinkle the unflavored gelatin over 2 tablespoons of cold water in a small bowl and let it sit for 5 minutes to soften and bloom.
- Heat the Milk and Infuse Vanilla: In a saucepan, combine the whole milk, the scraped vanilla bean seeds, and the vanilla pod. Heat the mixture over medium heat until steam rises, then remove from heat and let it steep for 10 minutes to infuse the vanilla flavor.
- Whisk Egg Yolks and Sugar: In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture becomes pale and thick.
- Temper the Egg Mixture: Remove the vanilla pod from the milk. Slowly whisk about half of the warm milk into the egg yolk mixture to temper the eggs, preventing curdling.
- Cook the Custard: Pour the tempered egg yolk mixture back into the saucepan with the remaining milk. Cook over medium-low heat, stirring constantly, until the custard thickens and coats the back of a spoon (reaching about 170°F or 77°C).
- Incorporate Gelatin: Remove the custard from heat. Squeeze out any excess water from the bloomed gelatin and whisk it into the hot custard until completely dissolved.
- Strain and Cool Custard: Strain the custard through a fine-mesh sieve into a clean bowl to remove any solids. Allow it to cool to room temperature, stirring occasionally to prevent a skin from forming on the surface.
- Whip Cream: In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Fold Whipped Cream into Custard: Gently fold the whipped cream into the cooled custard mixture until smooth and evenly combined.
- Chill and Set: Pour the combined mixture into serving dishes or molds. Cover and refrigerate for at least 4 hours, preferably overnight, until the Bavarian cream is fully set and silky smooth.
