  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Garlic and Additional:

  • 1 head of garlic, top sliced off
  • 1 lemon, quartered
  • 1 tablespoon honey
  • ¼ cup (20 g) fresh basil, chopped

Instructions

  1. Preheat and Prepare: Preheat the oven to 390°F (200°C). Cube the potatoes and place them in a baking dish.
  2. Season the Potatoes: Drizzle 1 tablespoon of olive oil over the potatoes. Season with thyme, oregano, salt, and pepper. Toss to coat.
  3. Add the Feta and Garlic: Place feta in the center of the dish. Add garlic and lemon wedges. Drizzle remaining olive oil.
  4. Bake to Perfection: Roast for 45-55 minutes until golden. Remove garlic if browning too much.
  5. Mash and Mix: Squeeze garlic cloves out of skins. Mash into a paste. Add to dish with lemon juice and basil. Mix gently.
  6. Finishing Touch: Drizzle honey over the top. Sprinkle with basil.
  7. Serve and Enjoy:
