Potatoes:
- 1–2 large baking potatoes, washed and cubed
Feta and Seasonings:
- 7 oz (200 g) block of feta cheese
- 2 tablespoons olive oil, divided
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
Garlic and Additional:
- 1 head of garlic, top sliced off
- 1 lemon, quartered
- 1 tablespoon honey
- ¼ cup (20 g) fresh basil, chopped
Instructions
- Preheat and Prepare: Preheat the oven to 390°F (200°C). Cube the potatoes and place them in a baking dish.
- Season the Potatoes: Drizzle 1 tablespoon of olive oil over the potatoes. Season with thyme, oregano, salt, and pepper. Toss to coat.
- Add the Feta and Garlic: Place feta in the center of the dish. Add garlic and lemon wedges. Drizzle remaining olive oil.
- Bake to Perfection: Roast for 45-55 minutes until golden. Remove garlic if browning too much.
- Mash and Mix: Squeeze garlic cloves out of skins. Mash into a paste. Add to dish with lemon juice and basil. Mix gently.
- Finishing Touch: Drizzle honey over the top. Sprinkle with basil.
