  • Author: Lila
  • Total Time: 25 minutes
  • Yield: 8 mini pizzas 1x

Description

These Mini Pizzas made with flaky biscuit dough are a quick and easy way to satisfy pizza cravings. Topped with your favorite sauce, cheese, and assorted toppings, they bake up golden and bubbly in just 25 minutes, perfect for a crowd-pleasing snack or meal.

Ingredients

Scale

Dough

  • 1 16.3 oz can refrigerated Pillsbury™ Grands!™ Flaky Layers Original Biscuits (8 Count)

Sauces

  • 1 cup pizza sauce (or marinara, pesto, Alfredo sauce, or any sauce you prefer)

Cheese

  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese (optional)

Toppings (Optional)

  • Mini or regular pepperonis
  • Bacon
  • Vegetables
  • Black olives
  • Fresh parsley or basil leaves, minced for garnishing

Instructions

  1. Preheat and Prepare Dough: Preheat your oven to 375°F (190°C). Press each biscuit into a 6 to 8-inch round shape and place them on a large 21×15-inch parchment-lined sheet pan or divide between two smaller pans. Stretch them as thinly as possible to allow for puffing during baking.
  2. Add Sauce and Toppings: Spread a generous amount of pizza sauce evenly over each dough round. Sprinkle shredded mozzarella cheese and grated parmesan cheese (if using). Add your choice of optional toppings such as mini or regular pepperonis, bacon, vegetables, or black olives.
  3. Bake the Mini Pizzas: Bake in the preheated oven for 12 to 15 minutes, or until the bottoms turn deep golden brown and the cheese is bubbly. For extra browning on top, broil the pizzas for 1 to 2 minutes, but watch closely to avoid burning.
  4. Serve and Garnish: Remove the pizzas from the oven and let them rest on the pan for a minute or two. Garnish with freshly chopped parsley or basil and sprinkle dried oregano or red pepper flakes if desired. Serve the mini pizzas warm and fresh for the best flavor.

Notes

  • For thinner and crisper crusts, press and stretch the biscuit dough as thin as possible before baking.
  • Feel free to customize toppings to your liking—vegetarian or meat options work great.
  • Watch the pizzas carefully when broiling to prevent burning.
  • Using parchment paper on the baking sheet helps prevent sticking and makes cleanup easier.
  • These mini pizzas are best enjoyed fresh but can be refrigerated and reheated.
