Macaron Shells

  • 5–6 drops Orange Americolor Gel Food Coloring

Peach Italian Meringue Buttercream

  • 1 cup + 2 Tbsp (250g) Italian Meringue Buttercream
  • 3 Tbsp – ⅓ cup (50-75g) Peach Puree (to taste)

Peach Puree

  • 4 large (baseball-sized) peaches (approximately 5 cups sliced, 907g without pits or skins)
  • 1 Tbsp (16g) freshly squeezed lemon juice
  • ½ cup (100g) granulated sugar
  • 1½ tsp (5g) tapioca flour
  • ⅛ tsp (1g) vanilla extract (optional)

Instructions

  1. Prepare the Peach Puree: Halve, pit, and peel the peaches. Slice them and place in a saucepan with lemon juice and granulated sugar. Cook over medium heat, stirring occasionally, until the peaches are soft and have released their juices. Mash the peaches and strain through a fine-mesh sieve to create a smooth puree. Whisk in tapioca flour and vanilla extract if using. Cook for an additional 2-3 minutes until thickened. Allow the puree to cool completely before use.
  2. Make Macaron Batter: Prepare your Italian Meringue Macaron batter according to its recipe instructions. Once ready, gently fold in the Orange Americolor Gel Food Coloring until evenly incorporated.
  3. Pipe Macaron Shells: Pipe the macaron batter onto baking sheets lined with parchment paper, spacing them evenly. Let the piped shells rest at room temperature until a skin forms, about 30-60 minutes, to ensure proper texture.
  4. Bake Macaron Shells: Bake the shells following your recipe’s specified temperature and time. Once baked, allow them to cool completely on the baking sheets before carefully removing to avoid cracking.
  5. Prepare Peach Buttercream Filling: Prepare the Italian Meringue Buttercream as per recipe instructions. Once ready, gently fold in the cooled peach puree until just combined, taking care not to overmix to maintain a fluffy texture.
  6. Assemble Macarons: Pair up cooled macaron shells of similar size. Pipe a ring of the peach Italian meringue buttercream onto one shell, then spoon a small amount of reserved peach puree into the center of the buttercream ring. Top with the paired shell and gently press to sandwich the filling evenly.
  7. Mature Macarons: Place the assembled macarons in an airtight container and refrigerate for at least 24 hours to allow flavors to meld and texture to develop before serving.
