  • 2 Cups Filtered Water

  • 1/2 Teaspoon Dried Basil
  • 1/2 Teaspoon Dried Oregano

  • 46 Cups Baby Spinach

Pasta & Oils

  • 9 Ounces Gluten-Free Lasagna Noodles (Jovial brand recommended, uncooked and broken apart)
  • 1 Tablespoon Olive Oil

Instructions

  1. Sauté Onions: Heat the olive oil in a large pot over medium heat. Add the chopped sweet onion and sauté until the onions are translucent and softened, about 5 minutes.
  2. Cook Ground Beef: Add the ground beef to the pot along with dried basil, dried oregano, and salt. Cook over medium-high heat, stirring occasionally until the beef is 90% cooked through, approximately 7-9 minutes.
  3. Add Liquids and Noodles: Pour in the chicken broth, tomato sauce, filtered water, and add the uncooked lasagna noodles broken into smaller pieces. Stir everything to combine.
  4. Simmer Covered: Cover the pot and let the soup simmer on medium-low heat for 15 minutes to allow the noodles to soften and flavors to meld.
  5. Finish with Spinach: Uncover the pot and stir in the baby spinach. Continue to simmer the soup, uncovered, for an additional 15 minutes until the spinach wilts and the noodles are tender.
  6. Serve Hot: Ladle the soup into bowls and serve immediately for a warm, comforting meal.
