Instructions
- Sauté Onions: Heat the olive oil in a large pot over medium heat. Add the chopped sweet onion and sauté until the onions are translucent and softened, about 5 minutes.
- Cook Ground Beef: Add the ground beef to the pot along with dried basil, dried oregano, and salt. Cook over medium-high heat, stirring occasionally until the beef is 90% cooked through, approximately 7-9 minutes.
- Add Liquids and Noodles: Pour in the chicken broth, tomato sauce, filtered water, and add the uncooked lasagna noodles broken into smaller pieces. Stir everything to combine.
- Simmer Covered: Cover the pot and let the soup simmer on medium-low heat for 15 minutes to allow the noodles to soften and flavors to meld.
- Finish with Spinach: Uncover the pot and stir in the baby spinach. Continue to simmer the soup, uncovered, for an additional 15 minutes until the spinach wilts and the noodles are tender.
- Serve Hot: Ladle the soup into bowls and serve immediately for a warm, comforting meal.
