Chocolate Peanut Butter Filling

Instructions

  1. Prepare Baking Dish: Line an 8-inch or 9-inch square baking dish with parchment paper, leaving an overhang on the edges to easily lift the bars later. For thinner bars, you may use a 9×13-inch dish.
  2. Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together, stirring until the sugar dissolves completely. Then stir in the vanilla extract.
  3. Cook Oats Mixture: Mix in the rolled oats and cook the mixture over low heat for 3 to 4 minutes, stirring well until everything is fully combined and heated through.
  4. Layer First Oat Mixture: Pour half of this oat mixture into the prepared baking dish. Spread and press it down evenly to form the bottom layer.
  5. Make Chocolate Peanut Butter Filling: In a small microwave-safe bowl, melt the peanut butter and chocolate chips together in short bursts, stirring frequently until smooth and well combined.
  6. Add Filling Layer: Pour the melted chocolate and peanut butter mixture over the oat crust, reserving about 1/4 cup for drizzling on top. Spread evenly.
  7. Top with Remaining Oat Mixture: Pour and gently press the remaining oat mixture on top of the chocolate layer. Drizzle the reserved chocolate mixture over the bars for a decorative finish.
  8. Refrigerate and Set: Chill the assembled bars in the refrigerator for 2 to 3 hours, or overnight for best results. Bring to room temperature before cutting into bars and serving.
