Instructions

  1. Blend Fruit and Coconut: Add the dried apricots to a food processor and pulse for 1-2 minutes until broken into small pieces. Then add shredded coconut, vanilla extract, and salt; process for another 1-2 minutes until a sticky, cohesive dough forms. It should clump together when squeezed but still have texture. Adjust consistency by pulsing more if dry or adding coconut if too wet.
  2. Roll Into Walnut-Sized Balls: Transfer the dough onto a clean work surface. Using slightly damp hands to prevent sticking, pinch off walnut-sized portions and roll into smooth balls. Place balls on a parchment-lined baking sheet as you go.
  3. Dust With Granulated Sugar: Pour granulated sugar into a shallow bowl. Roll a few balls at a time in the sugar until they are lightly coated, pressing gently to adhere the sugar. Arrange coated balls on a serving plate or store in an airtight container.

Notes

  • Use only dried apricots, preferably soft and pliable ones; fresh apricots have too much moisture and will ruin the dough.
  • If the dough is too dry, pulse more in the food processor; if too wet, add more shredded coconut.
  • For alternative coatings try powdered sugar, toasted coconut, cinnamon sugar, finely chopped pistachios, cocoa powder, toasted sesame seeds, or turmeric sugar for new flavor variations.
  • Store at room temperature in an airtight container for up to one week; sugar coating may become tacky over time.
