Description

These moist marzipan cookies, also known as marzipan clouds, are quick and easy to prepare, delivering a tender, almond-flavored treat perfect for marzipan enthusiasts. Cookie Dough

  • 200 g marzipan
  • 1 egg white
  • 80 g icing sugar
  • 110 g flour
  • 100 g ground almonds
  • 1 tsp cinnamon
  • 2 tbsp Amaretto
  • 1 pinch of salt

Decoration

  • 1 egg yolk
  • 3 tablespoons flaked almonds

Instructions

  1. Prepare the Dough: Crumble the marzipan finely using your fingers to break it up. Separate the egg white from the yolk and set the yolk aside for later. In a mixing bowl, combine the crumbled marzipan with the egg white, icing sugar, flour, ground almonds, cinnamon, Amaretto, and a pinch of salt. Knead all ingredients together thoroughly until a uniform dough forms.
  2. Preheat the Oven: Set your oven to 175 degrees Celsius (or 155 degrees Celsius if using a fan-assisted oven) to ensure it reaches the right temperature by the time you finish preparing the cookies.
  3. Shape the Cookies: Using your hands, roll the dough into small balls of equal size and place them spaced apart on a baking sheet lined with parchment paper. Gently flatten each ball slightly using the back of a fork to create an even surface for baking and decoration.
  4. Apply Decoration: Whisk the reserved egg yolk lightly with a fork. Brush this egg yolk over the top of each cookie to give a golden shine once baked. Then sprinkle the cookies generously with flaked almonds for added texture and nutty flavor.
  5. Bake: Place the prepared baking sheet in the preheated oven and bake the cookies for about 12 to 15 minutes, until they are lightly golden around the edges but still moist inside.
  6. Cool and Serve: Remove the cookies from the oven and allow them to cool completely on a wire rack. Once cooled, dust with powdered sugar before serving to add a touch of sweetness and a pretty finish.
