  • 1 cup coconut water (or water)

Instructions

  1. Rinse the rice: Rinse the sticky rice under cold running water until the water runs clear to remove excess starch, then drain thoroughly.
  2. Mix ingredients: In a medium saucepan, combine the rinsed sticky rice, tapioca pearls, coconut milk, and coconut water or plain water. Stir to evenly distribute all ingredients.
  3. Simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent the rice and pearls from sticking to the bottom.
  4. Add sugar: Stir in the granulated sugar and continue cooking, stirring frequently to avoid burning or sticking.
  5. Cook until thick: Lower the heat to low and cook for about 15–20 minutes, stirring regularly until the rice and tapioca pearls are tender and the mixture thickens into a creamy pudding consistency.
  6. Prepare mango: While the pudding cooks, peel and dice the ripe mangoes into small, bite-sized pieces to use as a fresh topping.
  7. Cool and serve: Remove the pudding from heat once thickened and let it cool slightly. Spoon into serving bowls and top with diced mango. Serve warm or chilled based on preference.

  • You can substitute coconut water with plain water, but coconut water adds more fragrance and depth in flavor.
