Ingredients
Scale
Chicken and Seasoning
- 1 ½ lbs boneless, skinless chicken thighs, cut into bite-size pieces
- ½ tsp salt
- ¼ tsp black pepper
Aromatics and Vegetables
- 2 tbsp vegetable oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 2 medium carrots, cut into 1-inch chunks
- 2 medium Yukon Gold potatoes, cut into 1-inch chunks
Liquids and Flavorings
- 3 cups low-sodium chicken broth
- 4 oz Japanese curry roux block (about 4 cubes)
- 1 tbsp soy sauce (optional)
- ¼ cup grated apple (optional)
Instructions
- Season and Brown the Chicken: Season the bite-sized chicken thighs with salt and black pepper. Heat the vegetable oil in a large pot over medium-high heat, then add the chicken pieces and brown them on both sides for about 4 minutes total. Once browned, transfer the chicken to a plate to set aside.
- Sauté Aromatics and Vegetables: Reduce the heat to medium and add the sliced onion to the same pot. Cook the onion for 3 to 4 minutes until it becomes soft and translucent. Next, add the minced garlic and grated ginger, cooking for an additional 30 seconds until fragrant. Stir in the carrot and potato chunks, cooking for another 2 minutes to slightly soften them.
- Add Broth and Curry Roux: Pour in the low-sodium chicken broth along with the optional soy sauce and grated apple, then bring the mixture to a boil. Add the Japanese curry roux blocks into the boiling liquid and stir until completely melted and the sauce is smooth. Return the browned chicken and any accumulated juices to the pot.
- Simmer the Curry: Cover the pot and reduce the heat to maintain a gentle simmer. Cook for 20 minutes, stirring once or twice during cooking, until the vegetables are tender and the chicken is cooked through and infused with the curry flavor.
- Serve: Ladle the Japanese chicken curry into bowls alongside freshly steamed rice and serve hot for a delicious and comforting meal.
Notes
- Using boneless, skinless chicken thighs ensures tender and juicy meat that won’t dry out during simmering.
- Grated apple adds a subtle sweetness that balances the savory curry flavors, but it is optional.
- Low-sodium chicken broth helps control the overall saltiness of the dish, allowing you to season to taste.
- Japanese curry roux blocks are readily available in Asian grocery stores or online; they come in mild to spicy varieties to suit your preference.
- Serve with steamed white rice for an authentic experience, or with brown rice for added fiber.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 1 month.
