  • 1 cup green olives
  • 1 cup pepperoncini peppers
  • 1 red bell pepper, cut into 1-inch pieces
  • ½ red onion, cut into chunks
  • 3 cloves garlic, smashed

Herbs & Seasonings

  • 2 tsp Italian seasoning
  • 1 tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • ½ tsp whole black peppercorns
  • ¼ cup chopped fresh parsley

Marinade

  • 1 cup olive oil
  • ¾ cup red wine vinegar
  • ¼ cup white wine vinegar
  • 2 tbsp Italian dressing seasoning mix
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 tsp kosher salt
  • ½ tsp black pepper

Instructions

  1. Combine Ingredients: In a large bowl, mix together the hard salami, pepperoni, fresh mozzarella pearls, black olives, green olives, pepperoncini peppers, red bell pepper pieces, red onion chunks, smashed garlic cloves, freshly chopped parsley, Italian seasoning, dried oregano, and optional crushed red pepper flakes. Make sure all the ingredients are evenly distributed.
  2. Prepare Marinade: In a separate bowl or measuring cup, whisk together olive oil, red wine vinegar, white wine vinegar, Italian dressing seasoning mix, Dijon mustard, honey, kosher salt, and black pepper until the mixture is smooth and well combined.
  3. Combine and Marinate: Transfer the antipasto mixture into a large glass jar or an airtight container. Pour the prepared marinade over the mixture, ensuring every ingredient is thoroughly coated in the flavorful liquid.
