Description

Delight in the perfect balance of sweet and savory with these Honey Bacon Roasted Potatoes, featuring creamy Yukon gold potatoes roasted to golden perfection and coated in a rich honey-bacon glaze. This comforting dish blends buttery textures with a crisp bacon crunch, making it an irresistible side dish for any meal.

Ingredients

Scale

Potatoes

  • 4 cups Diced Yukon gold potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil

Bacon Glaze

  • 8 slices Bacon, chopped
  • 1/4 cup Honey
  • 2 cloves Garlic, minced (optional)

Instructions

  1. Boil Potatoes: Peel and chop Yukon gold potatoes into even-sized cubes. Bring salted water to a boil, add the potatoes and boil for 8 minutes until fork-tender. Drain and let steam dry for about 10 minutes to remove excess moisture.
  2. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Lightly oil a baking sheet with olive oil to prevent sticking and help potatoes roast evenly.
  3. Roast Potatoes: Spread the steamed potatoes evenly across the baking sheet. Drizzle with olive oil and season generously with salt and black pepper. Roast in the oven for 40-45 minutes, stirring halfway through to ensure all sides become golden and crisp.
  4. Cook Bacon: While potatoes roast, cook chopped bacon in a skillet over medium heat for 6-8 minutes until crispy. Drain any excess fat to prevent greasiness.
  5. Make Honey Bacon Glaze: Return the drained bacon to the skillet. Add honey and minced garlic, then simmer together for 2-3 minutes until the glaze thickens and coats the bacon beautifully.
  6. Combine Potatoes and Glaze: Pour the warm honey bacon mixture over the hot roasted potatoes. Gently toss to coat the potatoes evenly with the sweet and savory glaze.
  7. Serve: Serve the potatoes hot, garnished with chopped fresh parsley, green onions, or chives for added color and flavor.

Notes

  • For a milder garlic flavor, you can omit the minced garlic from the glaze.
  • Use vegetable oil instead of olive oil if preferred.
  • Adjust salt and pepper seasoning to taste, especially if using salted bacon.
  • Make sure potatoes are dry before roasting to achieve a crispy texture.
  • Garnish options such as fresh parsley, green onions, or chives add bright flavor and presentation appeal.
