- 4 lbs assorted apples (about 8–10 medium, cored and roughly chopped)
- 1 medium orange (peeled and quartered)

- 2 teaspoons whole cloves (or 1/2 teaspoon ground cloves)
Other
- 1/2 cup packed light brown sugar (plus more to taste, total used about 3/4 cup)
- 10 to 11 cups water
Instructions
- Prepare the Fruit: Core and roughly chop the apples without peeling them. Place all the apples into a large pot (at least 5 1/2 quarts). Peel and quarter the orange, then add it to the pot.
- Add Spices and Sweetener: Add the cinnamon sticks, nutmeg, and cloves to the pot. Pour in the brown sugar and then add water until it just covers the fruit and spices.
- Simmer the Cider: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium and let it boil lightly uncovered for 1 hour. Then, reduce the heat to medium-low, cover the pot, and let it simmer gently for an additional 2 hours. The cider should develop an amber color and the flavors will meld beautifully. Taste and add more sugar or hot water as desired for sweetness and spice balance.
- Strain and Serve: Strain the cider through a fine mesh strainer or cheesecloth placed over a large bowl or punch bowl. Press or squeeze the fruit to extract as much liquid as possible. Discard the remaining fruit pulp. Serve the cider hot for a comforting drink.
