Ingredients

Scale

Brownies

  • 1 cup unsalted butter
  • 4 oz semi-sweet chocolate, cut into pieces (or chocolate chips)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 2/3 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour
  • 2 Tbsp cornstarch
  • 1/2 tsp salt

Ganache

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Toppings

  • Colored chocolate candies
  • Mini M&Ms
  • Sprinkles

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or grease it thoroughly to prevent sticking. Set aside.
  2. Melt butter and chocolate: In a large bowl, melt the butter and semi-sweet chocolate together using the microwave. Heat in 30-second increments, stirring after each interval, until fully melted and smooth.
  3. Add sugars and vanilla: Whisk the granulated sugar, brown sugar, and vanilla extract into the melted chocolate mixture until well combined.
  4. Incorporate eggs: Add the eggs one at a time to the mixture, whisking well after each addition to make a smooth, glossy batter.
  5. Add dry ingredients: Sift in the cocoa powder, all-purpose flour, cornstarch, and salt. Whisk until the batter is completely combined and smooth without streaks of flour.
  6. Spread batter in pan: Pour the brownie batter into the prepared baking pan and spread evenly with a spatula to ensure uniform thickness.
  7. Bake brownies: Bake in the preheated oven for about 20 minutes, or until the top is set and a toothpick inserted comes out with a few moist crumbs. Avoid overbaking for fudgy brownies. Remove from oven and let cool in the pan for about 20 minutes.
  8. Prepare ganache: Heat the heavy whipping cream until it is just below boiling, either on the stove or in the microwave. Place the semi-sweet chocolate chips in a small bowl and pour the hot cream over them. Cover with a towel and let sit for 5-7 minutes to soften and melt the chocolate.
  9. Whisk ganache: Whisk the cream and chocolate mixture until smooth and glossy. This rich ganache will serve as the brownie topping.
  10. Frost brownies: Pour the ganache evenly over the cooled brownies. Spread gently to cover the entire surface.
  11. Add toppings: Sprinkle colored chocolate candies, mini M&Ms, or sprinkles over the ganache while it’s still soft for a fun cosmic look.
  12. Chill brownies: Refrigerate the brownies for at least 60 minutes to allow the ganache to set properly before cutting.
  13. Serve: Cut into 15-20 squares based on preferred size. Store any leftovers refrigerated due to the creamy ganache topping.

Notes

  • Use parchment paper for easy removal and clean edges when lifting brownies out of the pan.
  • Do not overbake brownies; they should be fudgy and moist inside with just set tops.
  • Allow ganache to cool slightly before pouring to avoid melting the brownies too much.
  • Store leftovers in an airtight container in the refrigerator and consume within 4-5 days for best freshness.
  • Customize the toppings with any favorite candies or nuts for variation.
