Description

This Greek Yogurt Bark is a delicious, protein-packed frozen treat that combines creamy Greek yogurt, peanut butter, and vanilla protein powder, topped with a layer of dark chocolate and a sprinkle of flaky sea salt. It’s a perfect healthy snack or dessert, easy to prepare and customizable to your sweetness preference.

Ingredients

Scale

Base Mixture

  • 1 cup plain Greek yogurt (whole milk/full fat)
  • ¾ cup creamy peanut butter
  • ¼ cup vanilla protein powder
  • 12 tablespoons maple syrup or honey
  • ¼ teaspoon vanilla extract

Topping

  • 1 cup dark chocolate chips
  • Flaky sea salt (optional)

Instructions

  1. Prepare the yogurt mixture: Stir together the Greek yogurt, creamy peanut butter, vanilla protein powder, maple syrup or honey, and vanilla extract until the mixture is smooth and creamy, ensuring all ingredients are well combined.
  2. Spread the mixture: Evenly spread the creamy mixture onto a parchment-lined quarter sheet pan. Using an offset spatula can help achieve an even layer. Aim for a thickness between ¼ inch and ½ inch based on your preference.
  3. Melt the chocolate: Melt the dark chocolate chips by microwaving in 30-second increments, stirring in between each session to avoid overheating and burning the chocolate until fully melted and smooth.
  4. Add chocolate topping: Spread the melted dark chocolate evenly over the peanut butter yogurt layer, covering it completely for a delicious chocolate shell.
  5. Freeze the bark: Place the pan in the freezer for at least 2 to 3 hours or until fully frozen and firm to the touch.
  6. Serve and store: Once frozen, optionally sprinkle flaky sea salt over the bark. Cut it into pieces with a sharp knife or break it into shards with your hands. Store the bark in an airtight container in the freezer for up to 3 months.

Notes

  • You can adjust the sweetness by varying the amount of maple syrup or honey to your taste.
  • Using an offset spatula makes spreading the mixture easier and more even.
  • Make sure not to overheat the chocolate when melting to maintain a smooth texture.
  • The bark should be stored in the freezer to maintain its texture and freshness.
  • Optional flaky sea salt adds a nice contrast to the sweetness and richness of the bark.
