Meatballs
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg, beaten
- 1 tablespoon olive oil (for cooking)
Lemon Herb Rice
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- Zest and juice of 1 lemon
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
Instructions
- Prepare the Meatball Mixture: In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, black pepper, and beaten egg. Mix thoroughly until well combined. Shape the mixture into 1-inch meatballs.
- Cook the Meatballs: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the meatballs and cook for 10–12 minutes, turning occasionally, until browned on all sides and cooked through. Remove from skillet and set aside.
- Toast the Rice: In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Add the rice and toast it for 2–3 minutes, stirring frequently, until it becomes slightly golden.
- Cook the Rice: Pour in the chicken broth along with the lemon zest and lemon juice. Bring to a boil, then reduce heat to low, cover and simmer for 15–20 minutes until the rice is cooked and liquid absorbed.
- Finish the Rice: Fluff the cooked rice with a fork. Stir in chopped fresh dill and season with salt and pepper to taste.
- Serve: Plate the lemon herb rice and top with the cooked turkey meatballs. Optionally garnish with extra dill or parsley and serve immediately.
Notes
- For extra flavor, add more fresh herbs to the meatball mixture, such as mint or oregano.
- Consider serving with a yogurt-based sauce or tzatziki for dipping.
