Meatballs

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg, beaten
  • 1 tablespoon olive oil (for cooking)

Lemon Herb Rice

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Zest and juice of 1 lemon
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, black pepper, and beaten egg. Mix thoroughly until well combined. Shape the mixture into 1-inch meatballs.
  2. Cook the Meatballs: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the meatballs and cook for 10–12 minutes, turning occasionally, until browned on all sides and cooked through. Remove from skillet and set aside.
  3. Toast the Rice: In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Add the rice and toast it for 2–3 minutes, stirring frequently, until it becomes slightly golden.
  4. Cook the Rice: Pour in the chicken broth along with the lemon zest and lemon juice. Bring to a boil, then reduce heat to low, cover and simmer for 15–20 minutes until the rice is cooked and liquid absorbed.
  5. Finish the Rice: Fluff the cooked rice with a fork. Stir in chopped fresh dill and season with salt and pepper to taste.
  6. Serve: Plate the lemon herb rice and top with the cooked turkey meatballs. Optionally garnish with extra dill or parsley and serve immediately.
