- 2 tablespoons of honey
- Black pepper & sea salt, to taste
- 1 egg (for egg-water mixture, optional)
- Optional: Chili flakes or balsamic glaze
Instructions
- Preheat Oven: Preheat your oven to 200°C (top/bottom heat) or 180°C (fan-assisted heat) to ensure it’s ready for baking.
- Prepare Pastry: Remove the puff pastry from the refrigerator and roll it out on a lightly floured surface to about 3-4 mm thickness for an even base.
- Cut Tartlets: Use round cutters approximately 5–6 cm in diameter to cut circles from the rolled dough. Place these circles on a baking sheet lined with parchment paper, and prick a small hole in the center of each tartlet to prevent excessive puffing during baking.
- Add Cheese and Spinach: Evenly spread the fresh goat cheese on each pastry circle, leaving a small border around the edges. Top the cheese with well-drained spinach leaves to avoid sogginess.
- Top with Figs and Walnuts: Arrange the sliced or quartered figs atop the spinach, then sprinkle chopped walnuts over each tartlet for added crunch.
- Prepare Edges: Brush the edges of the tartlets with either water or an egg-water mixture (1 beaten egg mixed with 1 tablespoon of water) to help achieve a golden crust.
- Bake Tartlets: Place the tartlets in the oven and bake for 12–15 minutes until the pastry is golden brown and has puffed up nicely.
- Cool Slightly: Remove the tartlets from the oven and let them cool for about 2 minutes to set before serving.
- Drizzle Honey and Season: Warm the honey gently using a microwave or a water bath and drizzle generously over each tartlet. Finish by seasoning with freshly ground black pepper and, if desired, chili flakes or a balsamic glaze for extra flavor.

- You can use fresh or dried figs depending on availability; dried figs will provide a more intense sweetness.
- Make sure to squeeze out as much moisture as possible from the spinach to prevent soggy tartlets.
