  • Author: Lila
  • Total Time: 35 minutes
  • Yield: 2 servings 1x

Description

This Garlic Spinach Stuffed Chicken recipe features juicy chicken breasts filled with a savory mixture of wilted spinach, minced garlic, cream cheese, and mozzarella. The chicken is golden-seared to perfection in a skillet, making it an elegant yet simple dinner option packed with flavor and nutrients.

Ingredients

Scale

Chicken:

  • 2 large Chicken Breasts (Approx 8oz / 225g each)
  • 2 tbsp Olive Oil (30ml, divided)
  • 1 tsp Dried Oregano (divided)
  • Toothpicks (for securing)

Filling:

  • 5 cups Fresh Baby Spinach (150g)
  • 4 cloves Garlic (Minced, 20g)
  • 4 oz Cream Cheese (Softened, 115g)
  • 1/2 cup Mozzarella Cheese (Shredded, 60g)

Garnish:

  • 1/4 cup Fresh Parsley (Chopped)
  • Remaining Dried Oregano

Instructions

  1. Preparation: Prepare all ingredients by washing the spinach and parsley, mincing the garlic, softening the cream cheese, and shredding the mozzarella to ensure everything is ready for quick cooking.
  2. Wilt Spinach: In a skillet, heat 1 teaspoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the fresh baby spinach and cook, stirring occasionally, until completely wilted—about 3-4 minutes. Remove from heat and allow to cool slightly.
  3. Mix Filling: In a medium bowl, combine the wilted spinach and garlic mixture with the softened cream cheese, shredded mozzarella, and half of the dried oregano. Mix thoroughly until well blended.
  4. Stuff Chicken: Using a sharp knife, carefully cut a horizontal pocket into the side of each chicken breast, creating room for the filling. Stuff each pocket generously with the spinach-cheese mixture. Secure the opening with toothpicks to prevent the filling from falling out while cooking.
  5. Sear Chicken: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the stuffed chicken breasts. Cook for 5-7 minutes on each side, or until the exterior is golden-brown and the internal temperature reaches 165°F (75°C), ensuring the chicken is fully cooked and juicy.
  6. Rest and Garnish: Remove the chicken from the skillet and let it rest for 5 minutes to allow the juices to redistribute. Remove toothpicks, then garnish with chopped fresh parsley and the remaining dried oregano. Slice and serve warm.

Notes

  • Ensure the chicken breasts are of even thickness or pound them slightly for uniform cooking.
  • For extra flavor, marinate chicken with a bit of salt, pepper, or lemon juice before stuffing.
  • Use toothpicks carefully to avoid injuring yourself and remember to remove them before serving.
  • This dish pairs well with a side of roasted vegetables or a fresh salad.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
