Ingredients

Scale

French Toast

  • 4 thick slices brioche bread
  • 2 large eggs
  • ⅓ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 pinch kosher salt
  • 1 tablespoon unsalted butter (for cooking)

Egg & Bacon Filling

  • 4 large eggs
  • 2 tablespoons whole milk or heavy cream
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon unsalted butter or oil (for cooking)
  • 6 slices bacon (cooked crispy)
  • ½ cup (56.5 g) sharp cheddar cheese (shredded)

To Serve

  • Maple syrup
  • Hot sauce

Instructions

  1. Prepare French Toast Mixture: In a shallow bowl, whisk together 2 eggs, ⅓ cup whole milk, 1 teaspoon vanilla extract, ½ teaspoon ground cinnamon, and a pinch of kosher salt until well combined.
  2. Dip Bread Slices: Dip each slice of brioche bread into the egg mixture, ensuring both sides are fully coated to absorb the custard mixture.
  3. Cook French Toast: Melt 1 tablespoon of unsalted butter in a large skillet over medium heat. Cook each slice of bread for 2 to 3 minutes per side until golden brown and cooked through. Transfer cooked French toast to a plate and set aside.
  4. Prepare Egg Mixture for Filling: In a medium bowl, whisk together 4 large eggs, 2 tablespoons whole milk or heavy cream, ½ teaspoon kosher salt, and ½ teaspoon black pepper until smooth.
  5. Cook Scrambled Eggs: In the same skillet or a clean one, melt 1 tablespoon of unsalted butter or oil over medium heat. Add the egg mixture and cook gently, stirring frequently, until eggs are just set but still moist. Remove from heat.
  6. Assemble Sandwiches: Place one slice of French toast on a plate. Top with half of the scrambled eggs, 3 slices of crispy bacon, and shredded sharp cheddar cheese. Place another slice of French toast on top to form the sandwich.
  7. Repeat for Second Sandwich: Use the remaining French toast slices, scrambled eggs, bacon, and cheese to assemble a second sandwich.
  8. Serve: Serve the sandwiches immediately with maple syrup and hot sauce on the side for added sweetness and heat.

Notes

  • Use thick slices of brioche bread for the best texture and flavor.
  • Cook bacon until crispy to add a nice crunch to the sandwich.
  • If preferred, you can substitute cheddar cheese with your favorite melting cheese.
  • Maple syrup adds a sweet contrast, and hot sauce provides a spicy kick—both optional.
  • For easier cooking, use the same skillet to cook the scrambled eggs after the French toast, but wipe it clean if burnt bits remain.
