- Sear the Chicken: In the same skillet, increase heat to medium-high and add olive oil if necessary. Season the chicken thighs with garlic powder, dried thyme, salt, and pepper. Let them sit at room temperature for 10 minutes before cooking. Sear the chicken for 2–3 minutes on each side until golden brown but not fully cooked. Remove and set aside. - Thicken the Broth: Reduce heat to medium. Sprinkle 1 tablespoon flour into the skillet and stir for 1 minute to cook out raw flour taste. - Simmer the Chicken: Nestle seared chicken thighs into the onion and broth mixture. Cover skillet with a lid and simmer on medium-low heat for 15 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Melt the Cheese: Place 1 slice of Swiss cheese on each chicken thigh. Cover skillet again and cook for 2–3 minutes until cheese is melted and gooey. Alternatively, turn off heat and let residual warmth melt the cheese gently.
