Fermented Mango Habanero Hot Sauce Recipe

  • Author: Lila
  • Total Time: 7 days to 21 days fermentation plus 10 minutes blending and straining
  • Yield: 64 servings 1x
  • Diet: Gluten Free

Description

This vibrant Fermented Mango Habanero Hot Sauce blends the tropical sweetness of ripe mangoes with the fiery kick of habanero peppers, balanced by the tangy zing of vinegar and aromatic ginger and garlic. Naturally fermented over several weeks, this hot sauce develops a complex, tangy flavor with a smooth texture, perfect for adding heat and depth to your favorite dishes.

Ingredients

Scale

Fruits and Vegetables

  • 2 red mangoes (ripe), peeled and diced
  • 12 habanero peppers, sliced
  • 2 red bell peppers, diced
  • 2 inch knob ginger, peeled and diced
  • 1 white onion, diced
  • 8 garlic cloves, diced

Brine and Seasoning

  • 4 cups water
  • 2 tablespoons coarse sea salt
  • ½ cup white vinegar
  • ½ teaspoon xanthan gum (optional)

Instructions

  1. Prepare Ingredients: Peel and dice the mangoes, slice the habanero peppers, dice the red bell peppers, ginger, white onion, and garlic cloves. Wash all fresh produce under cool running water before prepping.
  2. Prepare Fermentation Vessel: Wash a fermentation vessel (such as a half-gallon or two quart-sized mason jars) thoroughly with soap and hot water, then let dry. Divide the ingredients evenly if using multiple jars.
  3. Layer Ingredients: Place the diced mangoes, habanero peppers, bell peppers, ginger, onion, and garlic into the fermentation jar(s) in layers.
  4. Make Brine: Combine 4 cups of water with 2 tablespoons of coarse sea salt and stir until completely dissolved.
  5. Pour Brine Over Ingredients: Pour the salt brine over the layered ingredients until they are fully submerged. If you don’t have enough brine, make more using the ratio 2 cups water to 1 tablespoon sea salt.
  6. Weigh Down Ingredients: Use fermentation weights, a ziplock bag filled with brine, or crumpled parchment paper to keep the ingredients submerged under the brine to prevent mold formation.
  7. Secure Lid and Ferment: Seal the jar tightly and place it in a room temperature spot away from direct sunlight. Check daily, and open the lid briefly to release gases (burp) unless using an airlock lid.
  8. Monitor Fermentation: You’ll notice bubbles, a slight hissing sound when opening, dulling of ingredient colors, and cloudy brine indicating active fermentation.
  9. Ferment Duration: Allow the mixture to ferment for 7 to 21 days, depending on your taste preference and room temperature.
  10. Blend the Sauce: Once fermentation is complete, strain the solids, reserving the brine. Blend the fermented solids with ½ cup reserved brine, ½ cup white vinegar, and ½ cup water until smooth using a high-powered blender or food processor. Add ½ teaspoon xanthan gum if a thicker consistency is desired.
  11. Adjust Flavor and Texture: Adjust the taste by adding more brine for saltiness, more vinegar for acidity, or water to lessen heat until the desired flavor balance is achieved.
  12. Strain Hot Sauce: Pass the blended sauce through a fine mesh sieve for an ultra-smooth texture, removing any remaining solids.
  13. Store and Serve: Transfer the finished hot sauce to small jars or bottles and refrigerate. It will keep well refrigerated and develop flavor over time.

Notes

  • Ensure ingredients stay submerged during fermentation to avoid mold.
  • Fermentation times can vary depending on ambient temperature; warmer climates speed up fermentation.
  • Xanthan gum is optional and helps to thicken the sauce for a smoother pour.
  • Use gloves when handling habanero peppers to avoid skin irritation.
  • The hot sauce will continue to develop flavor after refrigeration and improve in taste over time.
  • Use a clean spoon to taste or stir to avoid contamination during fermentation.
