Ingredients

Scale

For the Beef Filling

  • 1 lb (450 g) lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp taco seasoning
  • ¼ cup tomato sauce
  • ¼ cup water
  • Salt and freshly ground black pepper, to taste

For the Tacos

  • 8 small corn tortillas
  • 1½ cups shredded cheddar or Mexican cheese blend
  • 2 tbsp vegetable oil (for crisping)

Toppings

  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • ¼ cup red onion, finely diced
  • 1 avocado, diced or sliced
  • ¼ cup sour cream
  • 2 tbsp chopped fresh cilantro
  • Lime wedges
  • Salsa or hot sauce (optional)

Instructions

  1. Sauté Onions and Garlic: Heat the olive oil in a large skillet over medium heat. Add the finely diced onion and cook for 3–4 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Cook Ground Beef: Add the lean ground beef to the skillet. Break it apart with a spatula and cook for 6–8 minutes until fully browned and cooked through. Drain any excess fat from the pan to keep the filling lean.
  3. Season the Beef: Stir in the taco seasoning, tomato sauce, and water. Season with salt and freshly ground black pepper to taste. Reduce heat to low and simmer the mixture for 3–5 minutes until it thickens and the flavors meld together.
  4. Warm Tortillas: Briefly warm the corn tortillas for a few seconds each to make them pliable and easier to fold without cracking.
  5. Assemble Tacos: Spoon a generous amount of the beef mixture onto one half of each tortilla. Sprinkle with shredded cheddar or Mexican cheese blend, then fold the tortillas in half to enclose the filling and cheese.
  6. Crisp the Tacos: Heat the vegetable oil in a large skillet over medium heat. Carefully place the folded tacos in the skillet and cook for 2–3 minutes on each side. Fry them until the tortillas turn golden brown and crispy, and the cheese inside melts smoothly.
  7. Drain Excess Oil: Transfer the crispy tacos to a paper towel-lined plate to absorb any extra oil from frying.
  8. Add Fresh Toppings and Serve: Fill the crispy tacos with shredded lettuce, diced tomatoes, finely diced red onion, diced or sliced avocado, a dollop of sour cream, chopped cilantro, and a squeeze of fresh lime juice. Serve alongside salsa or hot sauce as desired for extra flavor.

Notes

  • Use lean ground beef to reduce excess fat and keep the filling juicy but not greasy.
  • Warm tortillas briefly to prevent cracking when folding them.
  • Cook tacos in vegetable oil over medium heat to achieve a crispy exterior and melted cheese inside.
  • Drain fried tacos on paper towels to avoid excess oiliness.
  • Customize toppings based on preference, such as adding jalapeños, guacamole, or pico de gallo.
  • Store beef filling separately from shells and toppings; reheat beef gently before assembling.
