Ingredients
Scale
Chicken and Vegetables
- 2 lb boneless skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel diced tomatoes with green chilies
Seasonings
- 1 packet (1 oz) taco seasoning
- 1 packet (1 oz) ranch seasoning mix
Dairy and Garnishes
- 8 oz cream cheese, cubed
- 0.5 cup shredded cheddar cheese
- 0.25 cup sour cream
- 0.25 cup fresh cilantro
Instructions
- Layer and cook: Place the chicken breasts at the bottom of your slow cooker. Add the drained black beans, corn, and Rotel diced tomatoes with green chilies on top of the chicken. Sprinkle the taco seasoning and ranch seasoning mix evenly over everything. Scatter the cubed cream cheese across the top of the mixture to melt during cooking.
- Slow cook: Cover and cook on the low setting for 6 to 7 hours, or on high for 3 to 4 hours. Ensure the lid remains closed to maintain consistent heat, and cook until the chicken is fully cooked through and tender.
- Shred and mix: Remove the chicken from the slow cooker and shred it thoroughly using two forks. Return the shredded chicken to the slow cooker and stir everything well to combine. Continue stirring until the cream cheese has fully melted and formed a creamy coating enveloping the chicken and vegetables.
- Serve: Serve the Crockpot Fiesta Chicken over cooked rice, scoop it into tortillas, or assemble it in bowls. Top with shredded cheddar cheese, a dollop of sour cream, and sprinkle fresh cilantro for a fresh burst of flavor.
Notes
- For extra heat, add chopped jalapeños or hot sauce to the slow cooker.
- You can substitute the black beans with pinto or kidney beans if preferred.
- Using frozen corn works just as well if fresh or canned is unavailable.
- Leftovers keep well refrigerated for up to 4 days and freeze nicely for up to 3 months.
- Adjust the seasoning packets to lower sodium versions if desired.
