Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 8 slices deli ham
  • 8 slices Swiss cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and freshly ground black pepper, to taste

For the Breading

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder

For Cooking

  • 3 tbsp olive oil or melted butter (for baking) or vegetable oil (for frying)

Optional Creamy Dijon Sauce

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 2 tbsp Dijon mustard
  • ¼ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) if baking. Lightly grease a baking sheet or line it with parchment paper to prevent sticking.
  2. Pound the Chicken: Place each chicken breast between two sheets of plastic wrap and pound it until about ¼-inch (6 mm) thick, ensuring even thickness for rolling.
  3. Season the Chicken: Season both sides of each pounded chicken breast with garlic powder, onion powder, paprika, salt, and freshly ground black pepper to enhance flavor.
  4. Add Filling: Lay 2 slices of deli ham and 2 slices of Swiss cheese on each chicken breast. Carefully roll the chicken tightly around the filling and secure the rolls with toothpicks if needed to keep everything intact during cooking.
  5. Prepare Breading Stations: Set up three shallow bowls: one with flour, another with beaten eggs, and the third with a mixture of panko breadcrumbs, grated Parmesan cheese, Italian seasoning, and garlic powder.
  6. Coat the Chicken Rolls: Coat each chicken roll first in the flour, shaking off any excess. Then dip it into the beaten eggs, and finally thoroughly coat with the breadcrumb mixture to create a crispy crust when cooked.
  7. Cook the Chicken: For baking: Arrange the breaded rolls on the baking sheet and brush or drizzle with olive oil or melted butter. Bake in the preheated oven for 30 to 35 minutes, or until the outside is golden brown and the internal temperature reaches 165°F (74°C). For frying: Heat vegetable oil to 350°F (175°C) and fry each chicken roll for 5 to 6 minutes per side until golden. Optionally, finish in a 375°F (190°C) oven for 10 minutes to ensure doneness.
  8. Prepare Creamy Dijon Sauce (Optional): In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute to form a roux. Gradually whisk in milk until smooth and thickened. Stir in Dijon mustard and Parmesan cheese, then season with salt and pepper. Cook until the sauce is thickened and creamy.
  9. Rest and Serve: Let the cooked chicken cordon bleu rest for 5 minutes to allow juices to settle. Remove toothpicks, slice if desired, and serve warm drizzled with the creamy Dijon sauce or alongside your favorite sides.

Notes

  • For extra crispiness, sear the breaded chicken rolls in a hot skillet for 2–3 minutes before baking.
  • Ensure the chicken is pounded to an even thickness for uniform cooking and easier rolling.
  • Use a meat thermometer to verify the internal temperature reaches 165°F (74°C) for safe consumption.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven or air fryer to maintain crispness.
  • For longer storage, freeze cooked or uncooked chicken cordon bleu rolls for up to 2 months; thaw overnight in the refrigerator before reheating.
  • Customize the filling with Gruyère or cheddar cheese, add fresh herbs like parsley, or sprinkle cayenne pepper for a flavor twist.
