- 1/2 cup (113 g) unsalted butter, melted and slightly cooled
- 2 teaspoons vanilla extract
- 1/2 cup (85 g) semisweet chocolate chips

- 3/4 cup (90 g) powdered sugar
- 1 teaspoon instant espresso powder
- 1 tablespoon whole milk
- 1/2 teaspoon vanilla extract
- Up to 1 additional teaspoon whole milk, if needed
Instructions
- Prepare the Pan and Oven: Preheat your oven to 350°F (175°C). Spread 1 teaspoon softened unsalted butter inside an 8 x 8-inch or 9 x 9-inch square metal baking pan. Line the pan with parchment paper, leaving enough overhang on two sides to lift the cake out later.
- Make the Chocolate Crumb Topping: In a medium mixing bowl, combine 3/4 cup flour, 1/3 cup light brown sugar, 2 tablespoons cocoa powder, and 1/8 teaspoon salt. Stir with a fork to mix evenly. Pour in 4 tablespoons melted unsalted butter and stir until moist chocolate crumbs form, leaving many crumbs chunky and marble-sized. Set aside.
- Mix the Dry Cake Ingredients: In a large mixing bowl, whisk together 1 1/2 cups flour, 1/2 cup cocoa powder, 3/4 cup granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 2 teaspoons instant espresso powder until no lumps remain.
- Mix the Wet Ingredients: In another bowl, whisk 2 large eggs with 1/2 cup sour cream, 1/2 cup whole milk, 1/2 cup melted and slightly cooled unsalted butter, and 2 teaspoons vanilla extract until smooth and creamy.
- Make the Chocolate Espresso Batter: Pour the wet ingredients into the dry ingredients. Gently fold with a rubber spatula until barely no flour is visible. Fold in 1/2 cup semisweet chocolate chips just until evenly dispersed. Do not overmix.
- Add the Batter and Crumb Topping: Transfer the batter to the prepared pan, spreading evenly and into corners. Evenly scatter the chocolate crumb topping over the batter, keeping it loose and unpressed for a crumbly texture.
- Bake the Coffee Cake: Bake at 350°F (175°C) for 35–42 minutes. Start checking at 35 minutes by inserting a toothpick into the center; it should come out with moist crumbs but no wet batter. Avoid toothpicks hitting melted chocolate. Cool in the pan for 25–30 minutes.
- Make the Espresso Glaze: In a small bowl, whisk 3/4 cup powdered sugar, 1 teaspoon espresso powder, 1 tablespoon whole milk, and 1/2 teaspoon vanilla extract until smooth. If too thick, add up to 1 additional teaspoon milk slowly to achieve a drizzle consistency.
- Glaze, Slice, and Serve: Use parchment paper to lift the cooled cake from the pan onto a serving plate. Drizzle the espresso glaze evenly over the crumb topping. Let glaze set for 5–10 minutes, then cut into 9 squares and serve.
