  • 3 ¼ cups chicken bone broth (or regular broth for less protein)
  • ¼ cup low sodium soy sauce
  • 3 Tbsp honey
  • 23 tsp sriracha
  • 1 tsp sesame oil
  • 2 Tbsp rice vinegar
  • 45 garlic cloves, minced
  • 2 tsp minced ginger
  • 1 ½ Tbsp cornstarch
  • Optional: ½ of one seasoning packet from the ramen

Vegetables & Chicken

  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper, chopped
  • 23 green onions, chopped
  • 2 ½ cups pulled rotisserie chicken

Noodles & Toppings

  • 4 packs ramen noodles (only the noodle bricks)
  • To serve: a drizzle of sesame oil or chili crisp, green onions, sesame seeds, etc.

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Prepare the Sauce: In a 9×13 inch baking pan, whisk together the chicken bone broth, low sodium soy sauce, honey, sriracha, sesame oil, rice vinegar, minced garlic, minced ginger, cornstarch, and optional half seasoning packet from the ramen until combined well.
  3. Add Chicken and Vegetables: Stir the pulled rotisserie chicken, broccoli florets, shredded carrots, chopped red bell pepper, and chopped green onions into the sauce mixture in the pan, making sure everything is evenly coated.
  4. Arrange Noodles: Press the four ramen noodle blocks directly on top of the chicken and vegetable mixture. The noodles will not be fully submerged in the sauce, which is expected.
  5. First Bake: Cover the pan with foil and bake for 20 minutes. This steams the noodles and heats the mixture.
  6. Flip Noodles and Continue Baking: Carefully flip the noodle blocks so both sides cook evenly, cover with foil again, and bake for another 10-15 minutes until noodles become tender and easily separate.
  7. Stir and Final Bake: Stir the softened noodles into the chicken and vegetable mixture, then bake uncovered for an additional 10 minutes or until most of the liquid has been absorbed and the sauce slightly thickens.
  8. Rest and Serve: Allow the bake to sit for about 10 minutes after removing from the oven. The sauce will thicken further during this resting time. Serve with a drizzle of sesame oil or chili crisp and sprinkle with green onions and sesame seeds if desired.

Notes

  • You can adjust the sriracha amount to control the spice level or omit it for a milder taste.
  • Using bone broth adds extra protein and depth of flavor but regular chicken broth works just fine.
  • Feel free to add or substitute vegetables based on what you have on hand.
  • If you prefer gluten-free, use gluten-free ramen noodles and soy sauce alternatives.
  • Letting the dish rest after baking helps thicken the sauce and improves the texture.
