Main Ingredients
- 1 cup short pasta
- 3 cups cooked shredded chicken
- 10.5 ounces cream of chicken soup (one can)
- 1 cup Greek yogurt
- 3 tablespoons ranch seasoning mix
- 1½ cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup cooked and crumbled bacon
- 2 cups crushed potato chips
- Nonstick spray (for greasing)
Instructions
- Cook the pasta: Bring a pot of salted water to a boil and cook the short pasta until al dente. Drain the pasta well and set it aside to cool slightly.
- Prepare the baking dish: Preheat your oven to 350°F (180°C). Lightly grease a 9×13-inch baking dish with nonstick spray to prevent the casserole from sticking during baking.
- Mix the casserole ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, cream of chicken soup, Greek yogurt, ranch seasoning mix, and half of the cooked and crumbled bacon. Stir everything together thoroughly until the mixture is evenly incorporated.
- Assemble the casserole: Spread the combined mixture evenly into the prepared baking dish. Distribute the shredded cheddar and mozzarella cheeses evenly over the top of the mixture.
- Bake the casserole: Place the baking dish in the preheated oven and bake uncovered for 25 minutes, or until the casserole is bubbly and the cheese is fully melted and golden.
- Rest and add crunchy topping: Remove the casserole from the oven and allow it to rest for 5 minutes to set. Then sprinkle the remaining crumbled bacon and the crushed potato chips evenly over the top before serving to add a crunchy texture and extra flavor.
