Chicken and Marinade

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680g)
  • 2 tablespoons Cajun seasoning (store-bought or homemade with paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper)
  • 1 cup buttermilk (240ml) or 1 cup milk mixed with 1 tablespoon lemon juice, let sit 5 minutes

Breading Stations

  • 1 cup all-purpose flour (120g)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs (150g)

Frying and Assembly

  • Vegetable oil for frying (about 2-3 cups)
  • 4 brioche buns
  • ½ cup mayonnaise (120ml)
  • A little hot sauce (to mix with mayonnaise)
  • 4 leaves lettuce (iceberg or romaine)
  • 1 large tomato, sliced
  • Pickles, sliced

Instructions

  1. Prepare chicken: Trim any excess fat from the chicken breasts and slice each breast horizontally if they are thick to ensure even cooking throughout.
  2. Marinate chicken: In a large bowl, whisk together the buttermilk and 1 tablespoon of the Cajun seasoning. Add the chicken breasts to the marinade and coat them well. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours to allow the flavors to infuse.
  3. Set up breading stations: In one bowl, whisk the eggs until smooth. In a second bowl, mix the all-purpose flour with the remaining 1 tablespoon of Cajun seasoning. Pour the panko breadcrumbs into a third bowl.
  4. Bread chicken: Remove each chicken breast from the buttermilk, letting excess liquid drip off. Dredge the chicken in the seasoned flour, then dip into the beaten eggs, and finally press it thoroughly into the panko breadcrumbs to form an even coating. Place breaded chicken on a plate to rest briefly.
  5. Fry chicken: Heat vegetable oil in a skillet to about ½ inch depth over medium-high heat. Monitor the oil temperature to reach roughly 350°F (175°C). Fry the chicken breasts in batches, cooking for 4 to 5 minutes per side until they are golden brown and the internal temperature reaches 165°F (74°C). Transfer chicken to a wire rack to drain excess oil.
  6. Prepare buns and condiments: Toast the brioche buns in a dry skillet or under a broiler until they are golden and slightly crisp. Mix the mayonnaise with a little hot sauce to taste. Slice the tomato and prepare the lettuce leaves and pickles.
  7. Assemble sandwiches: Spread the spicy mayo evenly on both halves of each toasted brioche bun. Layer with lettuce leaves, tomato slices, the fried chicken breast, and pickles. Top with the bun crown and serve immediately while hot and crispy.
