For the Taco Filling

Instructions
- Prepare the Taco Filling: In a skillet over medium heat, sauté the finely chopped onion and minced garlic in a little oil until soft. Add the ground beef and cook until browned. Stir in the taco seasoning and water, then cook for about 5 minutes until the mixture thickens. Remove from heat and mix in the black beans, corn, and half of the shredded cheese until well combined.
- Prepare the Taco Bites Shell: Preheat the oven to 375°F (190°C) and spray a mini muffin tin with cooking spray. Unroll the crescent roll dough, separate into triangles, and cut each triangle in half to create smaller dough pieces.
- Assemble the Taco Bites: Press each dough piece into the bottom and up the sides of the mini muffin tin cups to form a shell. Spoon the prepared taco filling into each shell, filling generously but not overflowing. Sprinkle the remaining shredded cheese over each filled shell.
- Bake the Taco Bites: Bake in the preheated oven for 15-20 minutes until the dough is golden brown and the cheese is melted and bubbly. Remove from the oven and let cool for a few minutes before carefully removing the taco bites from the tins.
- Serve: Serve the taco bites warm with optional toppings like sour cream, salsa, chopped cilantro, diced tomatoes, sliced jalapeños, or guacamole for added freshness and flavor.
