  • 3/4 cup sparkling water
  • 2 tablespoons heavy cream (lightly whipped, optional)

Instructions

  1. Blend the Apples: Place the 6 sliced apples, 2 tablespoons of lemon juice, and 1 cup of water into a blender. Blend everything until smooth to create the base for the syrup.
  2. Strain the Apple Juice: Pour the blended apple mixture through a fine mesh sieve into a bowl or pot, pressing gently to extract as much smooth apple juice as possible while leaving pulp behind.
  3. Cook the Spiced Syrup: Transfer the strained apple juice to a medium pot. Add 1/4 cup maple syrup, 3 cinnamon sticks, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and 1/4 teaspoon ground ginger. Simmer gently for 20 to 30 minutes until the liquid has reduced by half and thickened into a syrup.
  4. Finish the Syrup: Remove the pot from heat, take out the cinnamon sticks, and stir in 1 teaspoon vanilla extract. Allow the syrup to cool completely before using or storing.
  5. Add Syrup to Glass: For each drink, pour 2 tablespoons of the cooled spiced apple syrup into a tall glass.
  6. Add Ice: Fill the glass with 1 cup of ice cubes to chill the drink.
  7. Pour Sparkling Water: Add 3/4 cup sparkling water to the glass and gently stir to combine with the syrup.
