- Strain the Apple Juice: Pour the blended apple mixture through a fine mesh sieve into a bowl or pot, pressing gently to extract as much smooth apple juice as possible while leaving pulp behind.
- Cook the Spiced Syrup: Transfer the strained apple juice to a medium pot. Add 1/4 cup maple syrup, 3 cinnamon sticks, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and 1/4 teaspoon ground ginger. Simmer gently for 20 to 30 minutes until the liquid has reduced by half and thickened into a syrup.
- Finish the Syrup: Remove the pot from heat, take out the cinnamon sticks, and stir in 1 teaspoon vanilla extract. Allow the syrup to cool completely before using or storing.
