Instructions

  1. Prepare the Potatoes: Scrub the russet potatoes clean under running water, then dry them well with paper towels. Pierce each potato several times with a fork to allow steam to escape while cooking.
  2. Season the Skins: Brush the potato skins evenly with ½ tablespoon of oil. Sprinkle ¼ teaspoon of fine sea salt over the oiled skins to enhance crispiness and flavor.
  3. Air Fry the Potatoes: Place the prepared potatoes in the air fryer basket, making sure they are not overcrowded. Air fry at 400°F (204°C) for 45-50 minutes until the potatoes are fork tender inside.
  4. Cool the Potatoes: Remove the potatoes from the air fryer and let them cool for about 10 minutes until they are manageable to handle safely.
  5. Scoop Out the Flesh: Cut each potato in half lengthwise and carefully scoop out the soft flesh into a large bowl, leaving the skins intact for optional use later.
  6. Add Butter and Seasonings: Add 3 tablespoons of room-temperature salted butter to the hot potato flesh, allowing it to melt slightly. Then sprinkle in garlic powder, onion powder, ½ teaspoon fine sea salt, and ⅛ teaspoon black pepper. Use a potato masher to gently mash and combine the ingredients.
  7. Heat the Cream: Warm 1 cup of cream until steaming but not boiling—either microwave for 45-60 seconds or heat over medium stovetop heat in a saucepan.
  8. Incorporate Cream: Pour half of the hot cream over the mashed potatoes and mash until fully absorbed. Add the remaining cream and continue mashing gently until smooth, creamy, and free of large lumps. Be careful not to over mash to avoid a gummy texture.
  9. Serve: Spoon the mashed potatoes onto plates. Top with 2-3 tablespoons of additional salted butter and sprinkle with freshly chopped chives for a fresh, flavorful finish.
