Instructions

  1. Prepare the cucumber slices: Use a vegetable peeler to peel strips along the length of the cucumber, leaving about half an inch of skin between each peel for a striped look while keeping crunch. Then slice the cucumber into 24 thin, even rounds.
  2. Cut cheese and ham: Cut the cheddar cheese slices and deli ham slices into quarters, making perfect bite-sized pieces to fit on cucumber rounds.
  3. Pipe cream cheese: Scoop whipped cream cheese into a piping bag and snip off the end. Pipe a small dollop onto the center of 12 cucumber slices (half the total).
  4. Add cheddar cheese: Place a quarter slice of cheddar on top of each cream cheese dollop, allowing the cream cheese to hold it in place.
  5. Fold and add ham: Fold each quarter slice of ham in half twice to create a layered wedge. Place one ham wedge on top of each cheddar slice.
  6. Assemble sandwiches: Top each stack with another cucumber slice, forming a sandwich. Secure with a toothpick through the center to hold all layers together.
  7. Serve or chill: Serve immediately for optimal crunch or cover and refrigerate until ready to serve.
