  • Author: Lila
  • Total Time: 25 minutes
  • Yield: Enough glaze for a 6-8 inch cake

Description

This White Mirror Glaze Cake recipe delivers a stunning, glossy finish perfect for elegant cakes and special occasions. The recipe features a smooth, shiny white chocolate glaze that sets beautifully to create an eye-catching mirror-like surface. Using gelatin and white chocolate as key ingredients, this glaze is easy to prepare and adds a professional touch to any cake.

Ingredients

Scale

Gelatin Mixture

  • 10 g Gelatin powder
  • 50 ml Cold water (for blooming gelatin)

Sugar Syrup

  • 100 g Granulated sugar
  • 50 ml Water

Glaze Base

  • 200 g White chocolate
  • 100 ml Heavy cream

Optional

  • Food coloring (gel-based, optional)

Instructions

  1. Prepare the Gelatin: Sprinkle gelatin powder over 50 ml of cold water in a small bowl. Allow it to bloom for 5-10 minutes until it becomes spongy and fully hydrated.
  2. Make the Sugar Syrup: Combine granulated sugar and 50 ml of water in a medium saucepan. Heat over medium heat, stirring constantly until the sugar dissolves completely. Bring to a gentle boil, then remove from heat.
  3. Melt the Chocolate: Place white chocolate in a heatproof bowl and melt it over a double boiler or microwave, stirring occasionally until smooth and fully melted.
  4. Combine Ingredients: Add the bloomed gelatin to the hot sugar syrup and whisk until dissolved. Pour this mixture over the melted white chocolate and stir until fully incorporated.
  5. Blend the Mixture: Transfer the combined mixture to a blender or food processor. Blend until smooth and glossy to ensure a flawless glaze texture.
  6. Strain the Mixture: Pass the blended glaze through a fine mesh sieve to remove lumps and air bubbles, ensuring a perfectly smooth finish.
  7. Cool the Glaze: Let the glaze cool until it reaches about 90°F (32°C), the ideal temperature for pouring over cakes.
  8. Color (Optional): If desired, add gel food coloring at this point to tint the glaze without affecting its consistency.
  9. Glaze the Cake: Place the cake on a rack set over a baking sheet to catch drips. Slowly pour the glaze over the cake starting from the center, working outward to coat evenly.
  10. Smooth the Surface: Quickly use a spatula to gently smooth the glaze surface before it begins to set.
  11. Allow to Set: Let the cake sit at room temperature for 10-15 minutes until the glaze firms up and is set to touch.
  12. Serve: Transfer the finished cake to a serving platter and enjoy the gorgeous mirror glaze finish.

Notes

  • Make sure the gelatin is fully bloomed to avoid lumps in the glaze.
  • Use gel food coloring to prevent diluting the glaze consistency.
  • Glazing temperature is critical; pouring at too high a temperature will cause the glaze to slide off, while too cool will cause clumping.
  • Use a fine sieve to remove air bubbles for the smoothest finish.
  • This glaze works best on chilled cakes to help it set quickly without melting the frosting underneath.
